Grilled BBQ Chicken and Creamy Macaroni Salad


Ingredients:


For the BBQ Chicken:

4 chicken legs

1/2 cup BBQ sauce

1 tablespoon honey (optional, for extra glaze)

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon salt

For the Macaroni Salad:

2 cups cooked macaroni pasta

1/2 cup diced tomatoes

1/4 cup diced bell peppers (any color)

1/4 cup diced carrots

2 green onions, (finely chopped)

1/2 cup mayonnaise

1 teaspoon mustard cream

1 teaspoon lemon juice

Salt and pepper to taste


Prepare the BBQ Chicken:

Smoke and marinate the chicken with chili powder, Add garlic powder, salt, and pepper and let sit for 30 minutes.

Grill the chicken over medium heat, about 20-25 minutes.

Brush with honey-infused barbecue sauce during the last 5 minutes of grilling for a shiny, caramelized finish.

Make the macaroni salad:

In a large bowl, combine the cooked macaroni, diced tomatoes, bell pepper, carrots, and green onions.

In a small bowl, combine the mayonnaise, mustard cream, lemon juice, salt, and pepper.

Toss the macaroni mixture until well coated.

Assemble and serve:

Serve the grilled barbecue chicken with the creamy macaroni salad.

For a fresh touch, garnish with additional green onions or parsley.
